Menu Monday and Weekend Scenes

It's another rainy Monday here with temps in the 50s, I think we're all wondering if summer will ever arrive at this point.  Truthfully I'm tired of being cold!

We had a super busy weekend with a road trip to Vermont for the Covered Bridges Half Marathon.  We made our way north through New Hampshire Friday evening stopping in Lebanon for dinner...
Dinner was very good and of course we saved room for dessert.

We finally checked into the Killington Grand Resort Hotel a little after 9pm!  I did a light workout Saturday morning at the fitness center and returned to the room to get the troops moving.  It was just before 10am when we landed at Johnny Boy's Pancake House in nearby Rutland.
Despite the "yard sale chic" decor, the food was delicious.  Possibly the best egg white, spinach, tomato and feta omelet I've ever had!

We hit the road and headed north to Middlebury, Vermont to see Middlebury College.  This could possibly be the most beautiful campus that I've ever seen with a perfect blend of old and new architecture, artwork, a golf course and fabulous athletic facilities!
Did I mention the views?
From there we continued north to the Burlington area which looks over Lake Champlain.
We drove through UVM, but after Middlebury, no one was impressed.  Although they do have an excellent Medical School and teaching hospital!
From Burlington we drove east to Waterbury because no trip to Vermont is complete without a stop at Ben & Jerry's Factory!
Mr. PS and I visited 20 years ago this summer so it was fun to bring the kids back with us.  We grabbed tickets for the short 20 minute tour and Mr. PS scored a sample smoothie from a trainee...
Sadly you can't take photos of the production line, but here we are in the flavor room and the best part is that the tour ends with samples!  Our group sampled Milk and Cookies.  Ben & Jerry's creates 12 new flavors a year and retires 12 flavors each year as well.
Despite some generous samples, we had to stop at their scoop shop...chocolate please!
I tried their vegan Caramel Almond Brittle, made with an almond milk base.  It was delicious!
Mr. PS tried Frozen Fruities which is a cereal milk base with crisp fruity cereal swirls.  Riley had a Half Baked milkshake and Reagan tried Chocolate Therapy.
They have three cows on premises...for show??
From Waterbury, we made our way south and stopped at Quechee Gorge...
before heading to downtown Woodstock.  The Woodstock Inn sits in the center of Woodstock facing the town green.  It's lovely, but sadly it couldn't accommodate our party of five for race weekend.
After a busy day we opted for dinner at the hotel.  Preston's was excellent and hit the spot after a long day of sightseeing!
Sunday morning Mr. PS dropped me at the start of the Covered Bridges Half Marathon in Pomfret.  I'll be back tomorrow with a full recap of the race.
I cleaned up after the race and it was time to hit the road home, but not before we tried Killington's Beast Coaster (one of their many summer attractions).
So that was our action packed weekend, hope you had a good one too!  I made it to the supermarket this morning so here's a peek at what's cooking this week...
