Menu Monday and Weekend Scenes

I'm running a bit behind here, it was a busy weekend and an even busier Monday since we're into full on moving mode!

Somehow I've pulled together a menu for the week since we still need to eat and get through our weekly routines!

Monday- Vegetable Risotto
Tuesday- Sloppy Joes, Tater Tots & Green Beans
Wednesday- Chicken Parm, Penne & Salad
Thursday- Chicken Parm Subs
Friday- out
Saturday- TBD
Sunday- TBD

Our weekend flew by as usual, we kicked it off Thursday evening in at the Rhode Island Convention Center with the City Year Providence Starry Starry Night Gala.

Friday morning we closed on our new house and busily ran around afterwards!  I was up and out early for a 10K road race on Saturday morning.  I was excited to come in second in my age division...until I saw the official results and realized that there were only three of us in the 40-49 category!

 Despite the chaos and boxes, we still enjoyed Derby Day with a Derby-themed dinner...

 Bourbon marinated pork roast, pineapple casserole and green beans.

Sunday we gave our parents their first peek at the new house and took them to a local favorite, The Red Wing Diner for dinner!  Only the best for our moms!
