Menu Monday and Weekend Scenes

Hello Monday!  It was a very busy weekend here at Chez PS and the best part was that spring finally decided to show up!

Rowan took the day off from Montessori on Friday so that we could have some fun together!  We hit Legal C for lunch and went to see Smurfs The Lost Village.  We enjoyed Trolls more, but this was perfect for her.
I made Spanakopita Friday night along with a mixed green salad, it was really delicious!
I whipped up some blueberry pancakes for the crew on Saturday morning before heading off to the gym.  I used the Krusteaz Blueberry Pancake mix and they smelled just like blueberry muffins!
I caught up on some chores around the house before my parents arrived to attend a wedding nearby.
We joined them for the wedding Mass and then headed off to dinner at Abby Park in Milton.
We started with these sourdough pretzels and mustard, fig, cheese fondue sauce!
I had the salmon, arugula & fennel salad for dinner.  Our meals took a long time to arrive so sadly we
skipped out on dessert.
I was up bright and early on Sunday to put a Farmer's Casserole and French Toast Bake in the oven. Unfortunately so was Rowan, she decided to wake everyone so our day started a bit earlier than planned!
Once we were cleaned up I took my parents and Rowan for a ride, it was such a beautiful day!  We hit Volante Farms in Needham...
Crescent Ridge in Sharon...
And Lovell's in Medfield...
We came home, relaxed and enjoyed the warm afternoon!
We got ready to take my dad out to dinner for his upcoming birthday!
We headed to Davio's at Patriot Place in Foxboro home of the New England Patriots!
Oh those popovers!
We started with their famous Philly cheesesteak rolls, shrimp cotija rolls and chicken parm rolls!
She loves her Bubba!
Dinner arrived and I'm pretty sure Riley ordered a side of beef...
Reagan went with chicken...
and surprisingly I ordered salmon!
There was panna cotta for dessert...
molten chocolate cake...
and fresh fruit with housemate cannoli!
Good food and lots of love here!
So it's another beautiful day and I while I had plans for a long run, my hip started aching badly after 3.5 miles so I walked the rest and will be treating it with some ibuprofen and ice!  I hit the market on my way home and pulled together this menu plan for the week...

Monday- Turkey Kielbasa & Pierogi Sheet Pan Meal
Tuesday- Chicken Enchiladas
Wednesday- Skinny Stuffed Pepper Casserole
Thursday- Italian Wedding Soup & Cheese Panini
Friday- Homemade Pizza & Salad
Saturday- Red Sox
Sunday- Easter at Mom & Dad's, bring pineapple casserole & key lime pie

      The Farmer's Casserole can be made with sausage, ham or bacon and I tend to add veggies. Both are delicious! Enjoy!
