Menu Monday
Just back from a great week in the Virgin Islands! A much needed respite after this winter! Lots to share, but first our weekly menu...
I did most of our meal planning on the plane ride home on Saturday and then got up early Sunday to do all of the food shopping. The kids and I are heading to Nantucket on Friday for the weekend while Mr. PS attends his annual "GOLF" weekend...there's no actual golf involved, it's an acronym for Guys Only Ladies Forbidden. Nice, right?
Monday- Tomato Tortellini Soup and Cheese Panini
Tuesday- Beef Tacos/Taco Salad and Mexi Rice
Wednesday- Grilled Chicken, Cole Slaw, Roasted Seasoned Red Bliss
Thursday- Thai Turkey and Green Bean Rice Bowls
Friday- out (Cooke's in Hyannis)
Saturday- out on Nantucket
Sunday- TBD
So back to our spring break, we truly enjoy visiting new places each spring and this was no exception. We stayed on St. Thomas at The Ritz-Carlton, we opted for a club residence that I booked through http://www.vrbo.com. This worked out really well for our family of five, we had two bedrooms, 2.5 baths, a full kitchen and laundry! Here's what it looked like...

Honestly the place was spotless and the kitchen was well equipped. I had some groceries delivered so that we could have breakfast each day, we ended up hitting a local market for dinner makings one night. I made a spinach bolognese pasta with freshly dried bay leaves that we picked on St. John! This worked perfectly since we had been on a boat all day and everyone was wiped out!
