Menu Monday and Weekend Scenes
Merry Monday! Are you ready for Christmas? We're getting there. Most of the gifts are wrapped and ready, I'm just waiting on a couple of last minute deliveries. We'll spend Christmas Eve with Mr. PS's family at his brother's home and then my parents and my in-laws will join us here for Christmas day! Here's what's cooking, I'll share our simple Christmas menu on Wednesday...
Monday- chicken noodle soup & panini
Tuesday- The Pioneer Woman's Bruschetta Chicken
Wednesday- Homemade Pizza & Salad
Thursday- Christmas Eve
Friday- Christmas Dinner
Saturday- leftovers
Sunday- out
As usual the weekend flew by, we got a few things done around the house on Saturday morning and then we were off to Little Compton, Rhode Island to meet up with some college friends for an annual holiday dinner. Some years we plan a dinner out, but we also enjoy having a chef come in to cook for us. Chef Christine from Cozy Caterers has been great! We're fortunate that one of the couples has a beautiful family home on the Sakonnet River that can accommodate all of us for dinner and an overnight stay!
We started with a mixed green salad with pears, dried cranberries, feta and a poppy seed dressing.
Our entree was a filet mignon topped with a risotto cake and green beans in a brown butter sauce.
We finished with a kahlua lava cake.

After a lots of laughs and countless bottles of red wine, we called it a night. We'll reconvene for the Super Bowl on February 7th!
My parents hosted our trio overnight. We picked them up on Sunday afternoon and headed home where we enjoyed a quiet evening! I made this for dinner, so light and delicious!
