Disney Style

You can't go to Disney and not get in the spirit of the parks, it's unavoidable!  Those personalized Mickey ears call your name the moment you step onto Main Street!

As a family of five, I often try to coordinate our ensembles so that we're not a mismatched cluster.  This trip is no exception, I've tried not to be overly "matchy matchy", but there maybe a few coordinated shirts.  The goal is really for everyone to be comfortable and enjoy themselves!

For breakfast at Chef Mickey's and EPCOT, Minnie Mouse Bow T-shirt and Merona Chino Shorts.  Reagan has this t-shirt too, Rowan has a coordinating one and the guys have vintage Mickey shirts.
For the Animal Kingdom, Urban South Designs Tank, Old Navy 3/4 Sleeve V-Neck Sweater and Old Navy Twill Shorts.  Reagan has the same tank, Rowan has a coordinated personalized t-shirt and the guys are on their own.
And of course we'll all be sporting our MagicBands!
We will also pack some nicer ensembles for Easter dinner!

Menu Monday and Weekend Fun!

Happy Monday!  I think everyone here at Chez PS wishes we had today off because we're all exhausted from our fun-filled weekend!

We left Friday afternoon to head north for Reagan's New England CYO basketball tournament.  The whole team, including parents and siblings, decided to stay at Great Wolf Lodge.  We arrived at 4:30pm and I'm glad Mr. PS was coming on his own from Boston because he would have walked right out after seeing the check-in line wrapped around the lobby.  Oops, should have completed online check-in!
We finally made it to our room which overlooked the lobby.  It wasn't huge, but it suited our needs for the two nights.  Our team was staying in the same hallway which made for a lot of fun for the girls!
They give the kids wolf ears when you check-in, I thought they were cute and so did Rowan!  I think we had the spring version...
We met up with Mr. PS for dinner at a cute restaurant in downtown Leominster, where the tournament was being held, called Rye & Thyme.  The desserts were delicious!
We were off to our first game Saturday morning at St. Anna Catholic School.  The Diocese of Worcester hosted the games at local parochial schools.  The girls played so well, but unfortunately lost in the first round 41-35.
While their basketball day was done, the fun had just begun!  They frolicked in the indoor waterpark all day!  Everyone cleaned up later in the day for our team dinner.  Great Wolf Lodge did a great job hosting it!
Reagan and I were up and out early the next morning for an Irish Step Feis outside of Boston.  She did six dances, but only placed in one.  I think she was a little disappointed, but onward and upward!
By the time we made it home we were so exhausted, we both took a nap!  I decided to put off the food shopping until today and we ordered pizza for dinner.  Here's what's cooking this week...

Monday- Chopped Chicken Salad
Tuesday- Spinach, Tomato & Cheese Stromboli & Salad
Wednesday- Pasta Bolognese & Salad

It's a short week here, we're off to the Mouse on Thursday afternoon!  Need to gear up for that now...

Not sure if they were redesigned for 2014 or 2015, but they've been catching my eye lately! We could use the space, but unfortunately we're not looking for a new car right now.

Call me crunchy, but I love these sandals!  I own two pairs and they are so comfortable, especially for those of us with not so perfect feet.  They're a bit more reasonable at 6pm.com

I love this for summer paired with navy shorts or white jeans.

What's Cooking Wednesday

Thai Turkey and Green Bean Rice Bowls
I really like Asian food, especially Thai, but we don't tend to eat it that often because the kids aren't big fans. I was a little nervous when I introduced this recipe to them last year, but they loved it!

Ingredients
16-20 oz. ground turkey
1 lb. fresh green beans, washed and trimmed
1/2 cup onion, finely diced
2 T minced garlic
2 tsp ground ginger
4 T low sodium soy sauce
2 T fish sauce
1-2 cups Jasmine Rice, uncooked

Directions
1.  Cook rice according to package instructions.

2.  In a cast iron skillet or saute pan, brown turkey, onion and 1 tablespoon of minced garlic over medium-high heat.  As it cooks season with 1 teaspoon of ground ginger, 2 tablespoons of soy sauce and 1 tablespoon of fish sauce.
3.  Spray a wok or saute pan with cooking spray.  Heat and add garlic and green beans.  As green beans cook, season with 1 teaspoon of ground ginger, 2 tablespoons of soy sauce and 1 tablespoon of fish sauce.
4.  Once turkey mixture is browned and green beans are fork tender, combine them in a serving dish.

5.  Serve over Jasmine Rice.

Serves 6-8.

It's beginning to look a lot like...

EASTER!  I enjoy every holiday, I mean who doesn't like to celebrate?  Easter has always been a favorite especially in the northeast as it signals the beginning of spring and truly is a reason to celebrate!  It's also a special holiday to me as my grandparents were married on Easter Sunday of 1938.

We tend to go out for Easter brunch or dinner with our families if we're not traveling.  We don't purposefully travel for the holiday, but sometimes Easter falls during the kids' April vacation.  We've spent Easter in Florida a few times, Virginia once on our way to Hilton Head and even Maui...where the hotel put on a ton of fun activities for the kids!
This year we'll be spending Easter with Mickey, but we're still leaving our baskets out for the Bunny to fill...
The kids each have a Longaberger Easter basket, which I look forward to passing onto them someday.  They really are heirloom quality, each unique.

Menu Monday and Weekend Recap

Monday already?  Mondays seem to arrive way too quickly around here, I'm still working on my weekend "to do" list!

Most of our weekend revolved around a school production of Shrek Jr.  Riley returned as part of the crew and Reagan was on stage as a Dulocian and a tree!  They put on three performances and wrapped it up with a cast party last night.
In between performances, we scooted down to Providence Saturday morning for the St. Pat's 5K which ended up being my first snowy road race!  The race director cut off a downhill portion of the course due to the conditions, I figured that out when I saw my stellar time and realized it wasn't a full 5K!  Oh well, I was still happy to finish 20/323 in my age group.  I swear we getter faster with age or maybe it's just my zippy new neon pink sneaks!
After coming home and cleaning up, we dropped the kids at the theater and headed off with the littlest to meet some friends for dinner at the golf club...where no one will be playing golf anytime soon due to the snow.  Couldn't resist my Chin Chin Elsa Top and Travel Pants, we so need a dose of spring around here!

RFV 2.5


It's hard to believe that this little lady is 2 and a half today!  In many ways September 21st, 2012 seems like a lifetime ago, but yet the day is so clear in my mind that I remember it like it was yesterday!

I was not ready for her that day, she needed to wait at least another four days.  I was still recovering from major wrist surgery just ten days before.  I had badly broken my wrist during an exercise boot camp (yes, I'm crazy) and needed to have the bones reset along with some hardware implants.  I was due to see my orthopedic surgeon on the 24th to remove the surgical wrappings, have an x-ray and be fitted for a splint that would support the bones as they continued to heal over the next few months.

By late morning on the 21st, at 37 weeks pregnant, I knew that she didn't care about my post-op appointment on the 24th!  Contractions started coming quickly and I best get over it and get to the hospital.  I secured my mom to meet the kids at the bus stop that afternoon and made a call to Mr. PS who was on the golf course.  I suggested he call it a day and meet me at the hospital.  After throwing in a load of laundry and making sure that the house was tidy, I was on my way and so was Rowan.

My sweet labor and delivery nurse, a mom of four, took pity on me and my sad looking surgical wrappings and whipped up a cast cover from the newborn baby hat gauze material.  She made sure that my arm was supported and took such good care of me that when she went off duty 20 minutes before Rowan arrived, I hoped she would stay and she did.
At 7:19pm we met our third child, at 5lbs. 13oz. she was the smallest of the crew, but certainly healthy!  We were discharged two days later and Mr. PS, Rowan and I all made it to my post-op appointment where my orthopedic surgeon and his team were thrilled to meet our new addition!

So happy 2.5 Rowan Frances and thanks for keeping us on our toes!  Someday I'll share a little more about this special girl!
