Menu Monday and Weekend Scenes

The Thanksgiving leftovers are long gone so here's what's cooking this week...

Monday- Pasta Spinach Bake
Tuesday- Tacos, Mexi Rice, Salad
Wednesday- Chicken and Dumplings
Thursday- Spinach, Sausage & Ricotta Stromboli
Friday- leftovers
Saturday- out for Reagan's birthday
Sunday- Soup & Panini

We spent a good portion of Friday cleaning up the house after hosting Thanksgiving dinner.  We also packed for a brief getaway to Newport, Rhode Island for a wedding reception.

After getting the kids settled with my parents, we took off for Newport.  We had a couple of hours before we needed to get ready so we strolled a bit downtown.  We stopped into Kilwins for some fudge to bring home.
 The homemade ice cream looked so good, but I knew I had to put on a dress!
We also stopped into the Shore Soap Company where everything smelled so good!  I loved their holiday scent, Jack Frost!
 We stayed at The Attwater which is a boutique style B&B that is part of the Lark Hotels group.
I loved the modern decor!  
We had a king suite on the second floor.
 The sitting room had a gas fireplace!
 We got ready and Ubered over to OceanCliff where the reception was being held.
 We pulled up after dark so I snapped this photo the next day.
It was a beautiful venue and everything was perfectly executed!
It was late night so it was nice to sleep in!  Breakfast was included at The Attwater.  I was delighted to find lots of healthy and creative options, all served as small plates.
We went to 11:00am Mass at St. Mary's where John F. Kennedy and Jacqueline Bouvier were married in 1953.
After Mass, we enjoyed a quick lunch at The Black Pearl before picking up the kids.  The chowder is a must!

Gratitude

Thanksgiving is one of my favorite holidays.  I love the food of course, but I really love that it brings together family and friends to simply give thanks.

We are a thankful bunch here at Chez PS.  Gratitude took on a whole new meaning for us when Mr. PS was diagnosed with stage 3 colorectal cancer three years ago this week.

We are thankful his doctors found it and that he had access to some of the best medical care in the world. We are thankful to the countless doctors and nurses that got him through 15 months of treatments and surgeries. We are thankful for the love and support of our families and friends who's prayers uplifted us. We are especially thankful for this little girl and her well timed arrival, 9 weeks before her dad was diagnosed. Finally, we are thankful for every healthy day almost two years later.
While we gathered last Thursday to give thanks, really everyday is Thanksgiving here!  I hope you had a nice Thanksgiving too!

Tuesday Musings

I'm all for the Black Friday sale and once upon a time in high school and college I loved working retail on Black Friday, but I really don't understand why retailers need to open on Thanksgiving.  Walmart is open all day on Thanksgiving, Target and Macy's are opening at 6pm and I'm sure there are others.   I'm really bothered by this, at what point do we as a society recognize that this is wrong? Thanksgiving is a day to be with family and friends and be thankful for all that we have.

And don't even get me going on the Presidential election...I'm just hoping a good candidate pops out of the woodwork soon because at this point I'm considering a move to the UK!

On a lighter note, we're looking forward to attending a wedding in Newport, RI this weekend.  I decided to add a couple of new dresses to collection.  I really try to avoid "occasion shopping" by keeping a nice selection of classic dresses that can by styled differently based on the event and season.  I went a little out of my comfort zone on this one, but I'm glad I did!  It fits perfectly and really looks stunning!  It's a bit longer on me since there wasn't a petite option.
I tried it on with this pair of Pour La Victoire Angelie Patent Pumps and I think it's a winner!

Finally, the Patriots are still undefeated and I'll be enjoying my free Dunkin coffee today as a result, thanks guys!  Here's my favorite little Pats fan...

Menu Monday and Weekend Scenes

Rowan had off on Friday and Reagan had a half day both due to parent conferences so we hit up Chipotle for lunch.  Honestly it's been a few years, but glad I went back!  My veggie salad was delicious!
I hit the gym bright and early Saturday morning, I noticed on the ride home that one of the local radio stations was already playing Christmas music...can we get though Thanksgiving, please?
Reagan had a basketball game Saturday morning and then the big kids and I volunteered at the Turkey Brigade where we helped assemble 3,000 meals that were delivered yesterday throughout southeastern Massachusetts!  It was such an impressive operation and we were delighted to help out!
My parents' anniversary was last weekend, but they were enjoying a weekend in Maine so we took them out to dinner at Fleming's in Providence Saturday evening.  The food and service are always excellent!
Sunday morning I ran a local turkey trot to benefit a local park project.  It was a 5K, I decided to stretch this one out and ran 2 miles to the starting line and 2 miles home from the starting line.  I'm not a super speedy runner, but I've got good endurance so I really prefer longer races.  I've got a 5 mile turkey trot on Thanksgiving morning, so looking forward to wearing my hat for that one too!

Five for Friday

Happy Friday!  After being out on Monday night, it has felt like a long week so thrilled that Friday has finally arrived!  Here are a few things I've been loving lately...

Have your tried these?  So good!  My favorite (not pictured) is the new Cilantro Avocado.  I love the Caeser too!  I usually find it in the refrigerated produce section with the greens.

I love Ily Couture's collection of super soft t-shirts and sweatshirts!  I just added this one to my collection!  I also have the Wifey sweatshirt, perfect for winter lounging!

Calling all chocolate lovers...this cake is so dense and chocolatey with just a hint of pumpkin!  It's perfect for fall!  I made one this week for Rowan's school's monthly dessert raffle, but I may need to whip one up for us!

Grab some cardstock and print these at home for free!  Includes three different designs.

I still like to address my Christmas cards by hand, so I was excited to find The Lettermate on Etsy!  Just waiting for it to arrive and I'll start addressing our cards!

What's Cooking Wednesday

Spiced Pumpkin Granola

Ingredients:

3 cups oats
3/4 cup pumpkin
1/2 cup raisins or dried cranberries
1/2 chopped nuts (almonds, pecans, walnuts)
1/4 cup honey or maple syrup
2 tbsp ground flax seed
1 tbsp cinnamon
1 tsp nutmeg
1 tsp ginger

Directions:

1.  Preheat oven to 325 degrees.  Spray a 9x13 baking dish or pan with non-stick cooking spray.

2.  In a large mixing bowl, combine oats, flax seed, cinnamon, nutmeg and ginger.  Stir and then add honey (or maple syrup) and pumpkin.  Stir to combine, should be clumpy.

3.  Add dried fruit and nuts, stir to combine.

4.  Pour into baking dish and spread evenly.

5.  Bake 30-40 minutes, stirring/turning every 10-15 minutes.  Let cool and store in an airtight container.

Tuesday Ramblings

Okay so Monday got away from me, but I'm here to share our weekly menu and goings on at Chez PS.  First, here's what's cooking this week...

Saturday Reagan and I checked out ink'd by Cirrus.  A local custom design studio where you can design t-shirts, sweatshirts, bags and even shoes!
 Reagan designed her own headband for basketball.
 It came out AWESOME!  The owner actually suggested the monogram!
Reagan had her first game of the season and they won...must have been the headband!  We headed home and got ready to go out to dinner with some friends at the Scarlet Oak Tavern in Hingham.  It's a cute restaurant that opened in 2007 in a historic home.

After taking a rest day on Saturday, I went for an 8 miler on Sunday which felt great until Sunday night when I realized that I have a adduction muscle strain (inner thigh).  Ugh, not part of my training plan!  So I'll be going easy at the gym trying not to aggravate it for the next few days.  I have 5K next Sunday where I'd like to do well.

We took my in-laws out for their anniversary Sunday evening to a Rhode Island family favorite, nothing fancy, but the food is always so good!  My parents also celebrated an anniversary this past weekend, we'll be celebrating with them next weekend!

Last night we attended the Joe Andruzzi Foundation's Gratitude Gala at Gillette Stadium.  The airstream trailer (bar/lounge on wheels) in the bottom corner of the photo was part of the live auction!  There was also a silent auction and a manned super silent auction table with lots of fun events and experiences!
This organization provides financial and emotional support to families dealing with cancer.  While they originally served local residents, the foundation has grown and are now helping people as far as New York and New Jersey.  While insurance does cover most cancer treatments, people often have to travel to treatments where they need to pay for parking, eat meals out, in some cases hotel stays may be necessary.  People who are self-employed often lose wages during treatment. The Joe Andruzzi Foundation grants people funds to help cover expenses while they're battling cancer.  We love what they do to help people and are happy to support them!
