Thai Turkey and Green Bean Rice Bowls
I really like Asian food, especially Thai, but we don't tend to eat it that often because the kids aren't big fans. I was a little nervous when I introduced this recipe to them last year, but they loved it!
Ingredients
16-20 oz. ground turkey
1 lb. fresh green beans, washed and trimmed
1/2 cup onion, finely diced
2 T minced garlic
2 tsp ground ginger
4 T low sodium soy sauce
2 T fish sauce
1-2 cups Jasmine Rice, uncooked
Directions
1. Cook rice according to package instructions.
2. In a cast iron skillet or saute pan, brown turkey, onion and 1 tablespoon of minced garlic over medium-high heat. As it cooks season with 1 teaspoon of ground ginger, 2 tablespoons of soy sauce and 1 tablespoon of fish sauce.
3. Spray a wok or saute pan with cooking spray. Heat and add garlic and green beans. As green beans cook, season with 1 teaspoon of ground ginger, 2 tablespoons of soy sauce and 1 tablespoon of fish sauce.
4. Once turkey mixture is browned and green beans are fork tender, combine them in a serving dish.5. Serve over Jasmine Rice.
Serves 6-8.
