Resolution Update 4

It's Tuesday and I'm back with another resolution update!  I shared my New Year's resolution four weeks ago here and have shared my progress on the blog each Tuesday in hopes of holding myself accountable.

I'm down a pound this week which is encouraging after a flat week and then losing a half pound. This brings me to a total loss of 4.5 pounds with the original goal of losing 8-10 pounds.

As I said last week, this is much more challenging than I thought and it's all about diet and nutrition.  Slow and steady is my mantra when running and can be applied to this as well.  Focusing on good choices allows one to move in a positive direction and maintain the course.  That's not to say there won't be bumps in the road, often in the form of a scoop of ice cream, and we should absolutley enjoy those diversions every once in a while!

Menu Monday and Weekend Scenes

It's Monday again!  Not sure where the weeks go, but they sure go fast around here!  Hope you had a nice weekend.

I'll start our recap with Friday...we finally had our kitchen backsplash tiled although I'm still waiting for them to return to grout it.  We really like it, but now I'm wondering if we should have tiled higher.
Friday was National Chocolate Cake Day and since I love a good "food holiday", Betty Crocker, the girls and I made a s'mores cake for dessert.
Saturday morning I was off to spin class and then enjoyed a mango, orange, banana smoothie for breakfast. It was begging for some rum and a poolside chaise lounge in the Caribbean!
Saturday afternoon we took a walk around the neighborhood to check on all the building projects.  This is the house next door to us, it's sold and should be occupied by late spring.
This one is at the end of our street in the cul-de-sac.  It sits on two acres and is currently on the market. There's one more lot available on the street in between these two houses, also two acres.
Saturday evening, Mr. PS stopped at P.F. Chang's for a drink and appetizer before heading to a Chinese New Year Party.

 I opted for a traditional red dress and accessorized with gold jewelry, shoes and purse.
 Mr. PS was wearing his Chinoisierie too!  How cute were these year of the Rooster cookies?
We laid low on Sunday.  Rowan wasn't feeling great so we ended up having a cuddly day on the sofa!

Lot's of Super Bowl prep around here this week.  I'm anxiously awaiting my Bronwyn Hahahan Football Door Hanger to arrive...customized for the Patriots of course!  Here's what's cooking...

Resolution Update 3

Wow, it's Tuesday again which means that it's time for a resolution update.  Once again, I posted my original resolution here back on January 3rd and have been sharing my weekly progress.

After holding steady last week, I'm down a half pound this week for a total of 3.5 pounds lost.  It's slow going and harder than I thought it would be, but I'm sticking to my plan of losing 8-10 pounds.

Again, this is all diet and nutrition centered.  My exercise calendar is full!  So off I go this week knowing that I can do this by focusing on good choices!

Menu Monday and Weekend Scenes

Patriots nation woke up happy today, we're heading to Houston!  We'll be hosting our group's annual Super Bowl gathering here at Chez PS!  I may have already secured all of my Pats paper goods last week in anticipation of their win!
I whipped up an apple pie on Friday for Inauguration Day.  Despite not being thrilled by our new President, it's important to respect the election process and our Nation's ceremonial traditions.
I hit spin class on Saturday morning, showered and did my hair...which doesn't happen everyday as you can see why.  I just don't have the patience or time to do this everyday!

The girls and I ran some errands and then I made apricot, coconut, pecan granola...so good!
 Saturday night, we hit The Local in Wellesley with the kids.
 The guys started with the Short Rib Poutine...
 I had The Local Harvest Salad topped with salmon...
 Reagan tried their Margherita Flatbread...
 Mr. PS had the Crispy Chicken Sandwich...
 and Riley had a special, the Steak Frites.  Everything was delicious and the service was excellent!
 The guys also enjoyed dessert!  The Warm Skillet Cookie...
 and the Ice Cream Pie!  I think it's safe to say that we'll be back!
I met up with some college friends on Sunday morning for coffee and then it was off to a fundraising meeting for Rowan's school.  I was excited that Mr. PS was in charge of dinner!  He whipped up a delicious sausage, pepper & onion pasta in a homemade tomato cream sauce.  Then we settled in to watch the game.

A Class Act

As our nation prepared to inaugurate a new president this week, I realized how much I'm going to miss this beautiful woman as our First Lady!  What an amazing role model she's been with her commitment to health and nutrition!  And those arms...she's my fitspiration!
I will also miss seeing her in the spotlight, whether it be in J. Crew...
or Jason Wu...she always looked fabulous!

We had the pleasure of visiting and touring the West Wing of The White House as Secret Service guests in April 2014.  As I reflect, I'm so glad we had the opportunity during the Obama administration!
While our Secret Service agent refused to give me specifics on Mrs. Obama's workout routine (you know I asked), you could tell that they truly enjoyed serving and protecting the First Family!

What's Cooking Wednesday

Carrot Cake Cookies

If you like a healthy cookie, than give these a try.  They are moist and delicious.  Perfect for breakfast or as a snack!  I adapted my recipe from Perry's Plate

Ingredients:

1 cup flour (I used white whole wheat)
1 cup oats
1 cup shredded carrots
1 tbsp ground flax seed
1 tsp cinnamon
1 tsp ginger
1/2 cup coconut oil (melted)
1/3 cup shredded coconut
1/3 cup raisins
1/3 chopped nuts (optional)
2 tbsp agave syrup/nectar

Directions:

1.  Preheat oven to 375 degrees and line a cookie sheet with parchment paper.

2.  In a large bowl, combine flour, oats, flax seed, cinnamon and ginger.  

3.  Stir in carrots, coconut, raisins and nuts to dry ingredients.

4.  Add coconut oil and agave syrup/nectar and mix well with a spoon until you have a lumpy dough.

5.  Shape dough into balls and gently pat down onto cookie sheet.

6.  Bake 14-16 minutes and allow to cool.  Cookies will be moist inside.

Makes 16.

Resolution Update 2

I'm back with another resolution update.  I shared my resolution here back on January 3rd and gave an update last Tuesday here.

This week was flat, no loss, but no gain.  I suspected this is what would happen so I need to stay focused and be a little extra vigilant.  Perhaps the tortilla chips and homemade guacamole before the Pats game on Saturday didn't help or the slice of pumpkin pie on Friday night.  Did I mention the red wine?

Good decisions are definitely in order this week!

Menu Monday and Weekend Scenes

Happy Monday!  Hopefully you're enjoying a day off thanks to Dr. Martin Luther King, Jr.!
Our weekend has been fairly quiet which is just fine by me!  I hit spin class on Saturday morning and then there was lots of organizing around the house.  Saturday evening we enjoyed our Patriots tailgate dinner...at home!
At 28 degrees in the greater Foxboro area, we were happy to watch the game in our living room.  They need one more win to go to the Super Bowl!
After eating way too much the night before, I did an early workout on Sunday morning and then made a kale, pineapple and banana Vega One smoothie for breakfast.
I got a few things done around the house and whipped up a kitchen sink salad for lunch, it was really good!
I scooted out for a couple of errands and grabbed coffee.  I wonder what the barrista would say if I gave "Preppy Sue" as my coffee name??
Sunday evening, Mr. PS and I checked out Jack's Abby, a craft lager brewery, in Framingham, Massachusetts.
It was packed, but we managed to stalk a couple who were finishing up and grabbed their seats at the bar!
There were so many choices...
 so we sampled!
We had dinner too, I just didn't snap any photos.  We started with their spicy fennel sausage and ricotta pizza and then I had a side salad since the pizza was pretty filling.  Mr. PS had a caesar salad and their four cheese mac n' cheese which he couldn't finish.  I would definitely recommend it to any beer aficionados in the area.

I'm off to a strength and conditioning class this morning followed by the supermarket to provision for this week's menu...
