What's Cooking Wednesday

Watermelon, Arugula, Cucumber & Feta Salad
Without a doubt, this is my go-to summer lunch of 2015!  I've always been a fan of this combo, but I've become obsessed with it ever since receiving a watermelon, cucumbers and a bag of arugula in our weekly CSA.

So simple, fresh and easy.  Perfect to pack for the beach or pool!  No exact measurements needed with this one, I add roasted chick peas for a little extra texture and staying power.  You can also add cherry or grape tomatoes, seeds, nuts...whatever works for you!

Ingredients

Diced Watermelon
Arugula
Sliced Cucumbers
Sliced Red Onion
Roasted Chick Peas
Feta Cheese
Balsamic Dressing
