What's Cooking Wednesday

Hawaiian Chicken 

I had planned on using this this recipe for Hawaiian Chicken, but then decided to tweak it a bit and turn it into a slow cooker meal.  I think it turned out really well!
Ingredients:
1 1/2-2 lbs. boneless chicken breast
3 peppers (rainbow, diced)
1 red onion (diced)
4 spears fresh pineapple (cubed, reserve liquid)*
3 tbsp reduced sodium soy sauce
1 tbsp minced garlic
fresh pineapple juice (from store bought container)*

*you can also use canned pineapple and juice

Directions:
Combine all ingredients in a slow cooker and cook on low for 8 hours.
Shred chicken when ready and serve with brown rice if desired.
Enjoy!
