Menu Monday and Weekend Recap

Happy Monday!  We're enjoying snow day #5 here today, thankfully Mr. PS's office is closed too so he can join in the fun insanity!

We had a wonderful weekend, the highlight of which was a fundraiser on Saturday morning.  This was our second year participating in Cycle for Survival.  This is a four hour indoor cycling (spinning) event hosted by Equinox that raises money for rare cancer research at Memorial Sloan Kettering Cancer Center in New York.  Leukemia, lymphoma, thyroid, ovarian, pancreatic as well as all pediatric cancers are considered to be "rare".  We love that 100% of all donations go directly to research!

This weekend kicked off the 2015 Cycle for Survival season.  We participated in Boston, but there were events held in Los Angeles, Miami, New Jersey and on Long Island.  13 cities in total will host Cycle for Survival events this year!
 
Yesterday we caught up on a few things around the house, I planned the meals and food shopped since we were due for more snow.  Here's what's cooking this week...

Thursday- Lean Beef Tacos (or Taco Salad) with Mexi Rice
