Heart Healthy Turkey Chili

I love a good bowl of chili anytime of the year, but especially on a cold winter night.  This version will fill you up without filling you out!  It makes 6-8 servings.


1-1.5 lbs of ground white meat turkey
1 28 oz can crushed tomatoes
1 8 oz can tomato sauce
1 15 oz can of kidney beans, drained and rinsed
rainbow pepper pack, diced
onion, diced
8 oz frozen corn (not pictured)
2 Tbsp chili powder
1 Tbsp ground cumin
1 tsp ground coriander


1.  Brown ground turkey, diced peppers and diced onion in a skillet.

2.  In a large saucepan, combine crushed tomatoes, tomato sauce, kidney beans, frozen corn and spices.

3.  Add cooked turkey and vegetables to the saucepan and simmer on low for an hour.

4.  Sprinkle with shredded cheddar if desired, add some tortillas chips for crunch or serve with cornbread.
