Menu Monday and Weekend Scenes

Happy Monday!  Hope you had a fabulous weekend.  Before I head out for the day, here's this week's menu...not sure on Sunday yet.

Monday- Spinach Mac n' Cheese
Tuesday- Crock Pot Santa Fe Chicken (add diced onions and peppers)
Wednesday- Italian Wedding Soup (using turkey) & Panini
Thursday- Meatloaf (no topping), Mashed Potatoes & Green Beans
Friday- Take-out Pizza & Salad
Saturday- out
Sunday- TBD

Our weekend was fairly quiet, no complaints here.  We hit the trails at nearby Hale Reservation on Sunday morning, it was a perfect fall day with temps in the high 60s!

"Dora the Explorer" was in complete control!

We ended off with 5:00 Mass and dinner out at one of our local favorites while Riley was at Confirmation class.  Mr. PS, Reagan and I split this homemade pumpkin cheesecake!
